I’m guessing you have figured out a pattern here…..
Every holiday I make something grand with marshmallows for KRAFT Jet-Puffed Marshmallows. Two years ago I made a whole dessert table then last year I made a Star Spangled Flag cake and this year I challenged myself to do something different. Of course I still used marshmallows but this time I used them in a different way!
With this cake, I wanted to show how versatile marshmallows are especially for cake decorating.
I used marshmallows in four different ways: fondant, Rice Krispies Treats, decorated, and camouflaged (cut and colored).
I started of by making marshmallow fondant from JET-PUFFED Jumbo StarMallows. Seriously, marshmallow fondant is the most delicious and inexpensive fondant ever! It’s super easy to make too!
(I posted a tutorial a couple of years back but I found a better way to make it so I’ll have to post a new tutorial soon.)
Whatever color the marshmallows originally are is the color your fondant will come out. Since I wanted my fondant to be a little more bold than the baby blue and pink that the StarMallows were, I used AmeriColor Food Gel Colors to deepen their hues.
To make the twist ropes that went all around the cake I rolled out a thin log of each color, placed it next to each other and then twisted them together. This was a lot easier than I expected it to be.
Look….. Even my boys joined in the fondant playing fun!!
If you have kids, you have to let them play with marshmallow fondant one day. They can spend hours entertained and if they eat it, it’s okay 🙂

Next, it was time to start working on the American bald eagle that would be my cake topper.
This was the very first time I tried sculpting Rice Krispies Treats. Must say, all those years of watching cake shows have paid off haha!
I made a single recipe from the back of a JET-PUFFED Marshmallows bag and had a little left over to snack on while I worked. It’s so good :)
Once I was happy with my shape, I put it in the freezer for about 30 minutes to completely set before covering it in a thin layer of fondant.
In order to show the difference between the brown and the white “feathers”, I decided to make them from two different kind of marshmallows.
I attached the brown feathers with royal icing.
To attach each feather, I simply pressed on the upper part of the feather to the bird.
I could have made yellow fondant for the eagle’s beak and eye but I’m all about shortcuts so I painted the white fondant with a brush and yellow cocoa butter from Chef Rubber.
If you’re not familiar with colored cocoa butter, you better get familiar. It’s amazing!!! I hope to get to play with it more in the future so I can show you all the cool things you can do with it.

I used black food gel coloring to outline the eye and nostril. Then I used petal dust to define the brow line and give him the mean look bald eagles have.
Now, for the final touch…
I used JET-PUFFED StarMallows, royal icing and sanding sugar to decorate the red and blue stars for the top border for the cake.
I attached them with white royal icing.
