As you may have already noticed, every holiday I make a “marshmallow project” for my friends at KRAFT Jet-Puffed marshmallows and here is my latest piece – a St. Patrick’s Day Marshmallow Cake!!

This St. Paddy’s Day I wanted to celebrate by making a big, bright, and bold piece. I wanted to incorporate all the traditional elements of this celebration into one colorful cake using marshmallows of course 😉
I used Mini white marshmallows to make the sky and Regular marshmallow to make the clouds.

I used Regular white marshmallows to make the rainbow.

I used pink Heart Mallows to make the shamrocks.

I’m in love with this little friendly leprechaun 🙂 I think I’ll call him “O’Lucks” hahaha.
I made him last year during one of my marshmallow design classes I taught in San Diego. I always keep all my pops, I’m attached to them as if they were my babies. As you can tell, other than being rock hard, nothing happens to marshmallow pops if stored properly.
Did you notice he already has a pot of gold and is still checkout out the one next to him. I guess you can never have enough glitter!
These look more like gold nuggets than coins but they’ll work…
The pot of gold was made from a Jumbo white marshmallow.
I used two Mexican chocolate coins and an American one. O’Lucks is international!
The whole cake measures 22 inches high and 10 inches wide. It weighs about 8 pounds. I used marshmallows, sugar and royal icing to decorate it all. I also used embellishments such as edible ink pens, luster dust, disco dust, Airhead Xtremes and chocolate coins.
AMAZING!!! How are the marshmallows colored? I’ve snooped around a bit and can’t really find any answers. Trade secret??
