 I’ve heard of all kinds of unusual foods being cooked in slow cookers that had me intrigued. We all know the usual meals that can be cooked in slow cookers: soups, pot roast, casseroles, etc. but have you heard of cookies? I’m all about trying new things in the name of dessert so I decided to give this idea a try.  Seriously, being able to put it all together and walking away to do other things while it cooks is such an amazing concept! Whoever invented this appliance is a true genius.

Well….. It worked! I actually made a chocolate chip cookie in my slow cooker. It was easy, it tasted good, and it was soft. You all know I am a marshmallow fanatic so I added my own special do

se of marshmallows to the recipe. I’m pretty all kinds of other cookie recipes would work too. Might just have to try them out haha.

Slow Cookier Chocolate Chip Marshmallow Cookie

Prep Time: 10 minutes

Cook Time: 2 hours 30 minutes

Serving Size: 1 slice

Makes: 1 cookie



1 cup unsalted butter, softened

2 large eggs

1/2 cup granulated sugar

1/2 light brown sugar

1 Tablespoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup JET-PUFFED Mallow Bits

1 cup semi-sweet chocolate chips

1 cup pecans. coarsely chopped

With butter or cooking spray, grease the bottom half of the slow cooker’s pot. Cut a piece of wax paper to fit the bottom of the pot. Grease the wax paper as well.

Using a stand mixer, mix together the first 5 ingredients until creamy.

In a separate bowl, stir the flour, baking soda, and salt together. Turn the mixer to low speed and slowly add flour mixture. When mixture is incorporated, add chocolate chips, marshmallows and nuts until well-blended.

Spoon the dough evenly into the slow cooker pot and smooth top with spatula.

Cover and cook on LOW for 2:30 hours or until toothpick inserted into center comes out clean. Turn off the heat and remove pot from slow cooker base. Let cool in pot for 30 minutes before transferring cookie to cooking rack.

Serve slice of cookie with a dollop of JET-PUFFED Marshmallow Creme on top.
